WHAT’S COOKIN’ IN YOUR KITCHEN – RANDOM RECIPES – HAMBURGER VEGGIE SOUP

 

I like to cook. And I like to invent my own recipes. And I like to try other people’s recipes. And now I’m going to share them with you.

HAMBURGER VEGGIE SOUP

It’s cold and rainy here today, and this soup warms the heart as well as the tummy.

 

INGREDIENTS

  • 1 lb                  ground beef
  • 1 tablespoon    olive oil
  • 1                      onion

 

  • 1 can                beef broth
  • 1 can                cut green beans
  • 1 can                peas
  • 1 can                sliced carrots
  • 1 can                whole corn
  • 1 can                diced tomatoes
  • 2 med              potatoes, diced (I prefer red potatoes and I leave the skins on)

 

SEASONINGS

Salt and pepper, to taste

2 tablespoons  Worcestershire sauce

2 teaspoons     garlic powder  *I use powder not salt.

1 teaspoon       oregano

 

DIRECTIONS

  • Drizzle olive oil in large skillet, and add ground beef. Brown over medium heat. Season to taste with 1 tablespoon Worcestershire sauce, salt, and pepper.
  • Dice onion and add to meat.
  • Using a pastry brush, coat the inside of a Dutch oven or 4 quart pan with olive oil. Place on hot burner.
  • Add broth, canned vegetables, and potatoes. Season to taste with remaining Worcestershire, salt, and pepper, and stir in 1 teaspoon garlic powder, and the oregano. Bring to a low boil and turn burner to medium-low.
  • Drain hamburger and onion, and add to broth.
  • Cover pan and allow to simmer, stirring frequently.

 

SUBSTITUTES / ADDITIONS

Fresh or frozen vegetables in places of canned.

Add ½ cup chopped celery or mushrooms.

Add or change up any vegetables you prefer.

Thicken broth by adding ¼ cup instant potato flakes.

 

SERVING SUGGESTIONS

Add ½ cup uncooked barley or rice 30 minutes before serving.

Add ½ cup uncooked pasta 30 minutes before serving OR cook pasta separately and serve soup over noodles.

Prepare biscuits or cornbread according to directions, and serve with soup.

 

I *may* have added a wee bit too much macaroni… Then again, I like it that way!
